2 x 400g cans black beans, drained and rinsed well
1 very large tomato, chopped
2-3 cobs of corn – Steamed or grilled and sliced off
1⁄2 red onion, chopped
1 can sliced water chestnuts, drained and rinsed
1 bunch coriander, chopped
1⁄2 lime, juice and zest
3 tablespoons balsamic vinegar or more to taste
2 tablespoons toasted pine nuts
1. In a dry pan, toast pine nuts until just turning golden (make sure they don’t burn), Set aside to cool.
2. Add beans, tomatoes, corn, onion and water chestnuts to a bowl and mix.
3. Add coriander, cooled pine nuts, lime and balsamic vinegar and mix again. Serve with some grilled chicken, turkey or fish.
